Happy Cinco de Mayo everyone! 🇲🇽🇺🇸 We are celebrating today with this plate of Cochinita Pibil inspired pulled pork with a side of sautéed sweet onions with yellow bell pepper and pineapples and heaping side of homemade pickled jalapeños compliments of @mrsrevolutionbbq 🐷 We rubbed this down with achiote paste and a chile lime rub and lest it rest in the fridge overnight. 🍈🌶 We are smoked this on our @traegergrills Timberline 850 with Pecan wood. We did the first 2 hours on supersmoke and then pushed it up to 250º for a few more hours. We wrapped this at 145° wrap given the low fat content on this small cut. I had to add in a Cadillac Margarita to go with it 🍹Hope everyone has an awesome day! 😷🔥⠀

Technically a #tbt since I made this back on Sunday but who’s counting? I made two Duroc #porkshoulder that I got delivered from our great friends @proudsoulsbarbecue I rubbed one down with Mexican spices to make Gringo #carnitas and the other I rubbed down with our Hot & Spicy Chicken and Pork BBQ Rub. After rubbing these down I put them in the fridge overnight to rest. I am going to smoke these for about 10 hours using the pan method to keep all the amazing juices from these Duroc piggies 🐷 Have an amazing and healthy day! ❤️⠀

Some pork tenderloins and pineapple we smoked and grilled on our @traegergrills Pro 34 yesterday. Marinated the pork in pineapple juice and our Pinche Gringo Adobo Rub for 24 hours then put them on the smoke setting for 20 mins and then cranked it up to high for another 20. Used the pineapple to make salsa.🔥🐖❤️

Hey there #traegernation … Time to make up some #carnitas today on our @traegergrills Tailgater aka “little boy”.. Started with a Red Wattle Berkshire Cross pork shoulder from our good friends @crowdcow and rubbed it down with a mix of our Piche Gringo Adobo Rub and our Hot & Spicy Chicken and Pork Rub. Have a pan of Red Onions, Fresno Chile, Yellow Bell Pepper, Spring Garlic, @estrellajalisco beer, and chicken stock. After about 4 hours I will put the pork in the pan and seal it and braise it until it falls apart.. about 200°.
