Happy Cinco de Mayo everyone! πŸ‡²πŸ‡½πŸ‡ΊπŸ‡Έ We are celebrating today by making a small Cochinita Pibil inspired pork shoulder. 🐷 We rubbed this down with achiote paste and a chile lime rub and lest it rest in the fridge overnight. 🍈🌢 We are smoking this in our @traegergrills Timberline 850 with Pecan wood. I am doing the first 2 hours on supersmoke and then will push it up to 250ΒΊ for a few more hours. I will wrap this a little early given the low fat content on this small cut.
