Happy #humpday chicken fajitas! 🐔 This was a joint effort between myself and @mrsrevolutionbbq . She sautéed Onions, Bell Pepper, Padilla Pepper, Garlic and Mushrooms with a little bit of lime and soy sauce (trust me this makes the dish )until beautifully tender. ❤️ I made up the chicken with some cumin, garlic, salt, pepper, lime juice and finished it off with a shot of @espolontequila (and maybe one for myself) 🎉 We served these up family style and dug in. 🔥 And before you ask, yes we were watching The Great British Baking Show. 🎂 Hope everyone is safe and staying healthy. 😍⠀

Forgot a picture of the final product … While staying at home and #doingourpartco we put together this Fried Rice pantry dinner and thought we would share. ❤️ Everything from this meal we already had in our pantry and/or fridge. To put this meal together we pulled 2 cups of leftover rice from the fridge, some zucchini (a little past it’s prime), a can of Jalapeño Spam, about 1 1/2 Cuos of mixed frozen veggies, half an onion, minced garlic, some Sambal, and Hoisin sauce. 🔥 We make. Lot of Asian inspired meals so if you don’t have Sambal, you can substitute with and hot sauce and can use soy sauce instead of Hoisin. ☀️ Dice the veggies and the Spam.. set a pan to medium high and sauté the onions until translucent. Then add the frozen veggies and the zucchini. 🔥 After about 3 mins add the Spam and cook everything thru for about 5 mins, stirring regularly. Now add the rice and mix thoroughly adding Hoisin and Sambal to taste. Once everything is well incorporated and heated thru, serve up in a bowl and enjoy!!⠀
