Our @crowdcow grass fed and finished brisket after being brined for 10 days and then soaked in cold water to remove the excess salt. We then rubbed it down liberally with freshly ground black pepper, corriander, celery seed, and some mustard powder. This will next go into our @traegergrills Pro 34 with Signature Blend pellets for about 8 hours. What a labor of love!!⠀

Our 12lb grass fed and finished brisket from @crowdcow after brining 10 days.. next step is to soak it in some cold water for a day to remove the excess salt. After that we will briase the corned beef section (point) and smoke the pastrami section. It takes about 2 weeks to make pastrami the right way, but it sure is worth it!! ♥️🐮🥪🔥⠀

We got this beautiful 12lb grass fed, grass finised brisket from Engle Family Farms via our friends @crowdcow 2 weeks ago to make some homemade Pastrami and Corned Beef. We cut it in half and then brined it for 10 Days with Pacific Flake Sea Salt, Pickling Spice from @spiceology, Brown Sugar, and Pink Salt #1. Some would think we are crazy to invest 2 weeks into making our own pastrami, but once you have had homemade, will will never want the processed stuff again! Good morning #traegernation are you ready for #meatfriday? We sure are… We did a reverse sear on this Pasture Raised and Grain Finished Angus-Hereford Cross from our friends @crowdcow using our @traegergrills Pro 34 with Cherry Wood. We rubbed this down with our @revolutionbbq Texas Brisket BBQ Rub and then ran it on smoke for about an hour and then cranked it up to high and did about 5 mins on each side. Dang!! 🔥🐄🤘

Queue the music… After 10 days our #pastrami is finally done. We brined the most beautiful 6.5lb grass fed and finished Wagyu-Angus cross brisket from Windy N Ranch via our friends @crowdcow for 7 days, then desalinated for a day, then smoked it on our @traegergrills with Hickory wood, and then rested it in the fridge and then finally steamed it. OMG.. can’t describe how amazing this tasted! 🔥🐄❤️🤘
