Happy Cinco de Mayo everyone! ๐ฒ๐ฝ๐บ๐ธ We are celebrating today with this plate of Cochinita Pibil inspired pulled pork with a side of sautรฉed sweet onions with yellow bell pepper and pineapples and heaping side of homemade pickled jalapeรฑos compliments of @mrsrevolutionbbq ๐ท We rubbed this down with achiote paste and a chile lime rub and lest it rest in the fridge overnight. ๐๐ถ We are smoked this on our @traegergrills Timberline 850 with Pecan wood. We did the first 2 hours on supersmoke and then pushed it up to 250ยบ for a few more hours. We wrapped this at 145ยฐ wrap given the low fat content on this small cut. I had to add in a Cadillac Margarita to go with it ๐นHope everyone has an awesome day! ๐ท๐ฅโ
