We cut it in half and then brined it for 10 Days with Pacific Flake Sea Salt, Pickling Spice from @spiceology, Brown Sugar, and Pink Salt #1. Some would think we are crazy to invest 2 weeks into making our own pastrami, but once you have had homemade, will will never want the processed stuff again!
