Made up a deconstructed grilled chicken fajita salad using @mojolechonera La Lechonera’s Natural Mojo Criollo. We marinated 4 chicken breasts in the Mojo Criollo in a zip top bag in the fridge overnight and then rubbed it down with our Hot & Spicy BBQ rub before grilling it. We then grilled romaine lettuce hearts, onions, bell peppers, and avocados. We served all of this with fresh tortillas, shredded cheese, and some more of the Mojo Criollo as a dressing. What an amazing dish this was and enjoyed making our #wfcgrillswithmojo entry 🔥❤️

🔪Ingredients 🔪
Bottle of La Lechonera Mojo Criollo ❤️
4 Boneless skinless chicken breasts 🐓
2 Hearts of romaine 🥬
1 large sweet or white onion 🧅
2 bell peppers (mixed colors)🌶
2 avocados 🥑

🔪Steps🔪
Marinate the chicken in a zip top bag at least 4 hours up to 8 hours
Remove chicken from marinade and sprinkle with your favorite BBQ Rub
Grill chicken for 5-7 minutes at 400°
While the chicken is cooking, slice all the veggies in half lengthwise and drizzle in olive oil
Flip the chicken and cook another 5-7 minutes or until it reaches an internal temp of 165°
Remove the chicken from the grill and allow to rest 10 minutes
While the chicken is resting, grill all of the veggies until lightly charred and cooked through.
Remove the veggies from the grill
Slice the chicken and veggies and serve with tortillas, cheese, and more Mojo Criollo as a dressing
