Got to make sure to get that rub on the meat and not just on the skin. Slip your fingers under the skin at the bottom of the breast and get the rub all over the meat. If you only get rub on the skin the flavor won’t penetrate the meat. We are using our Chicken & Pork BBQ Rub on this beautiful Free Range Chicken. After rubbing it down I let it rest uncovered in the fridge for about 4 hours.⠀
