Some huge Cowboy Steaks we made this past weekend while on our Fly Fishing Trip in WY (where we had no Internet Service). We rubbed these beauties down with our Texas Brisket BBQ Rub and then reverse seared them on our @traegergrills Tailgater. These were smoked with Hickory at 250º for about an hour until they hit 125º and then cranked it up all the way until the internal temp hit 145º.
