Yesterday’s dinner. Carnitas stuffed Pablano pepper topped with creamy queso. Doesn’t get better than that.
Smoked the pork on the smoker. We cut it into smaller sections because we needed it to be done before dinner. Roasted a few pablanos and made queso. When all the elements were ready we assembled them, then devoured. So tasty!!!

Pork loin chops with apple raisin chutney and bacon wrapped carrots. Today was a busy day. One of those days that didn’t revolve around food. I planned a head yesterday and brined pork loin chops overnight. This morning I removed them from the brine and seasoned with our chicken and pork rub. I let that marinate all day until I was ready to make dinner.
I smoked the chops at 225° until IT reached 125° then cranked the grill up to 400° to sear and finish the cook.
The apple raisin chutney:
Diced apples
Raisins
Butter
Special spices
Sautéed until tender
The bacon wrapped carrots
Blanched the carrots until softened, wrapped with bacon, cooked on the smoker until bacon was crispy and fat rendered.

Who loves baked potatoes? Kicked this one up a notch with a prime ribeye steak. We had leftover steak so why not!
Baked the potatoes on the Traeger Pro 575 for just about an hour at 350°F They were seasoned with a SPG blend and olive oil. Wrapped in a foil package.
Sliced them down the middle without slicing all the way through.
Added butter, sour cream, sharp cheddar cheese, green onions and topped with the steak. Sprinkled a little Revolution Texas beef rub and devoured them😋

Ok so we used your Texas Brisket BBQ Rub on a 8.5 Pound Prime Rib Roast and wrapped it and put it in the fridge for 16 hours or so. Then we cooked it on our new Traegers 780 Pro, Adapting a Traeger Recipe based off some comments and WOW Everyone LOVED it. Your Texas Brisket BBQ Rub is AWESOME. What do you do with leftover bbq chicken thighs? I make lunch.
Chicken salad quick recipe-
I deboned the bbq chicken thighs and rough chopped them. Then I chopped up the vegetables. Mixed it all together with a dash of salt and pepper, mayo and Dijon mustard.
I placed it on a leaf of romaine lettuce with cut avocado and pepperoncini .
